Once again I am struck with my horrid Chinese food cravings (Maybe I should get this checked out…), but with summer not too far away, I am trying to hold onto every dollar I can. So rather than shelling out seven bucks for my usual sweet and sour tofu, I tried my hand at it. It surprisingly was really simple and super yummy! Making the sauce only took 5 ingredients- one of them being ketchup! (I know, I know…that’s not a traditional Asian ingredient. But what do you want from me? I am a college kid, we put ketchup on everything!) Plus it went great on top of the brown rice pilaf I made earlier this week.
What You’ll Need:
1 block extra firm tofu, diced into 1/2 in. cubes
1 tbs. sesame oil
2/3 cup of rice vinegar (you could use white also, but rice vinegar gives it a better taste)
2 tbs. ketchup
2 tsp. soy sauce
8 tbs. brown sugar
4 tbs. cornstarch mixed with 5 tbs. water
Sauce:
1. In a small pot add vinegar, soy sauce, brown sugar and ketchup,and bring to a boil.
2. Mix together cornstarch and water.
3. Add cornstarch mixture to pot. Stir until sauce thickens.
Tofu:
1. Heat sesame oil in a large pan. Add tofu and saute for about 3 minutes.
2. Add 1/4 cup of sauce to the tofu and cook for another 3- 5 minutes.
3. Remove tofu from heat and toss in another 1/4 cup of sauce.
4. Enjoy!
